I'd say most of us know about the Adobe creative suite, but there are free alternatives, programs for HDR, panoramas, star trails, etc. My contribution will be that most DSLR cameras come with software to remote control your camera with your computer. It allows for things like time lapse photography, long exposure (longer than the 30sec the camera alone allows for), and I'm sure much more that I haven't dug into yet. I also just want to mention that in addition to panoramas, it can also be used as an interface to do image alignment for image stacks or image warping/distortion corrections.

Then you can either use those aligned stacks in another program to create an HDR photo, or let Hugin create the HDR file for you. As an alternative to HDR, Hugin also has something they call an exposure fusion which basically gives photo-realistic HDR-like results (e.g. Ability to see both shadows and highlights in detail simultaneously) without the difficulties (in my experience) trying to tune the HDR tone mapping algorithms. You may not see much difference with GM vs IM, almost all the commands are the same it is just more performant. Darktable is quite nice for RAW work though, if it supported external databases I'd switch our house over to try that as a management suite. (We recently made the transition from Picassa to Digikam, despite being a Gnome house. I really didn't like how Picassa created so many files for storing versions, it made backups and any hope of migration quite painful. Digikam is definitely one of the best linux 'desktop user' applications ever written, though they certainly need some wiki help.).
